Description
The word Makloba in Arabic means turned upside down, hence the name given to this rice dish as the rice pot is turned upside down on the serving plate maintaining the carefully layered dish from inside. It includes layers of fried aubergine, carrot and potato slices, with rice cooked over a meat and vegetable stock, and lamb meat. It is then turned upside down and garnished with roasted nuts (almonds, pine nuts…) and parsley.
